I remember it clearly. Immaculate greens, delicious, fresh tomatoes and peppers with perfectly grated beets and carrots topped with a sprinkling of pumpkin seeds and kissed with feta cheese. The dressing was divine. It was the perfect salad. “What restaurant was I at?” you ask. Just a little place called…Home.
I looked up at France after taking the first bite and exclaimed, “God dang this is delicious!” Okay, I might have used another set of words, but you get the idea. This was the best salad I’d ever had. I asked France what dressing she’d bought and she said, “I didn’t buy it. I made it.” I was amazed and in love all over again. We men really are simple creatures.
She then proceeded to show me how easy it was to make the salad dressing and how it only took a handful of ingredients that you could change whenever you wanted in order to make an infinite number of salad dressings. Then we looked at the ingredient list on a store bought salad dressing and there were almost 20 ingredients, some of which weren’t even real food and most of which contained high fructose corn syrup.
From then on I was sold. Any inkling I ever had for store bought dressing was dead. Nail on the coffin, cold blooded killer, D-E-A-D, dead.
That was a few years back when France enlightened me to the simplicity, quickness and healthiness of making homemade salad dressings. While the dressing I share isn’t the one she made for me that day, it’s a great base salad dressing that you can easily modify whenever you want and is always handy to have around. Plus, it’s ready in less than a minute. Sweet!
