Ever get one of those days when it all feels like too much? Like the walls are caving in and you can’t find a way out?

I mean, I don’t. Not me.

I’m just saying if you do…

then trying to figure out how to eat healthy is the last thing on your mind.

The challenging part is if you don’t eat healthy, you end up feeling even worse. So it can be a little like a vicious cycle. So now what?

This salad is one I put together this week that accomplished the job nicely. I was surprised how quickly I went from starving and grumpy to sitting down to a lovely lunch. I would even go so far as to say I felt like I was eating out at a bistro. That’s my kind of meal!

The biggest time saver was having the lentils already made. Some of you may have a can of lentils kicking around (not that I recommend this but it’s far better than hitting up the drive thru). We happened to have some on hand. We made a huge batch (probably around 10 cups worth) and froze them in a bunch of separate containers. I now can take out a container from the freezer at the beginning of the week and have ready to go vegan protein any time.

Simple 3 Minute Lentil Bocconcini Salad

(Salad for 1 person)

  • 1/2 cup cooked lentils
  • 4 cherry tomatoes, quartered
  • bocconcini cheese
  • lettuce
  • 1/4 cup celery, sliced (optional)
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • salt and pepper

Put some lettuce on a plate. Top it off with 1/2 cup of lentils, quartered cherry tomatoes or diced tomatoes, celery and bocconcini cheese sliced 1/4 inch thick.

Mix the balsamic vinegar and olive oil together. Drizzle all over the plate and season with salt and pepper.

If you want to get fancy there are so many lovely additions you could make. I added sliced celery but try adding sliced cucumber, olives or capers. Adding chopped fresh parsley and green onions to the lentils would give it a ton of flavor with very little extra work.

It’s good to know that a healthy meal can still be faster than the drive thru.
