I have a dirty secret to tell.
Ssshhhh!
I used to be a condiment queen. Yup. I used to be one of THOSE girls. Open up my fridge and it was a sea of bottled sauces. A sauce for every style of mediocre cuisine I could think of. Bottle tikka masala, peanut thai sauce, bulgogi sauce, salad dressings, pastes of every type, ketchup and bbq sauce. When I think back on it now I think, “What a freakin’ waste of money!”
I’m not sure what’s more embarrassing: the amount of money I threw away on sugary, fake sauces, or that at the time I thought they actually tasted good. Please don’t judge, and I will do the same, for lurking in your fridge are probably a few bottles of sauces with very questionable ingredients. Just say you do because I am feeling vulnerable!
The good news is I’m reformed. My fridge is void of embarrassing sauces but one. Ketchup. That will soon be gone too since I just got the book, Preserving Food Without Freezing or Canning. Their Honey Ketchup recipe is the one I’m most looking forward to making, considering at one point in my life, I had no less than 20 bottles of random sauces. One I can live with, but I’m very excited to get rid of that ketchup!
I don’t miss a single sauce but 1, the BBQ sauce. Now, it’s not something we eat a lot of anyway (its been years since we’ve had it in the house), but when a hankering for BBQ sauce hits, I do wish we had some around. Most of the recipes for homemade BBQ sauce include ketchup as the main ingredient. NO THANK YOU. With some help from Sally Fallon’s Nourishing Traditions (the hint that the missing ingredient was fish sauce, I would have never guessed that on my own) and The Joy of Cooking, I was able to make up this yummy (addictive) little sauce that actually only took 2 minutes to make. Crisis averted.
Homemade BBQ Sauce
- 156 ml Tomato Paste (organic preferred or make your own)
- 2 Tbsp Worcestershire sauce (click here to make homemade if you like)
- 1 Tbsp Olive oil
- 2 garlic cloves, minced
- 1/3 cup apple cider vinegar
- 1/4 cup honey
- 1 tsp spicy smoked paprika
- 1 tsp Dijon mustard
- 1 Tbsp orange brandy
- 1 -2 tsp fish sauce, to taste
- salt and pepper to taste
Mix all the ingredients together until well combined. That’s it. Spread on your favorite meat and strike up the barbie.
I recommend this rub as the pairing to this sauce.
Rub
- 1 tsp salt
- 1 tsp regular paprika
- 2 tsp oregano
- 2 tsp chili powder
- 2 tsp coconut sugar
In a small bowl mix the ingredients until combined. Rub the spice mixture into the meat and let sit for 15 minutes.
